I have lost 160 lbs and kept it off for 7 years and continue to gain more health. I am a mother of two boys. I am from Rochester, NY. I have a BS in Nursing, and have worked in a Medical Intensive Care Unit as well as Community Health. 7 years ago, I was extremely overweight and sick with borderline high blood pressure, the beginning stages of fatty liver disease, among other things. I struggled for years trying to lose weight and exhausted just about every weight loss option that I could find. I managed to lose some weight but continued to feel sick. I read a book called The China Study, and changed my life forever. I began eating plant based and within weeks dropped weight and cured my fatty liver disease and everything else that ailed me. In 2015, I completed The Campbell Plan and in 2016 completed my certification in plant-based nutrition through the T. Colin Campbell Center for Nutrition Studies at Cornell University. In 2017 I finished my first half marathon and in 2018 I plan to finish my first full marathon. This lifestyle has changed my life in so many incredible ways, and I feel it's necessary to help others improve their health and quality of life. My goal is to educate others on the benefits of a whole food plant-based diet, and to deliver lifestyle programs for anyone interested in making the transition to a whole food plant-based lifestyle.

At 43-years old I was told I had to get bypass surgery. This was a life-changing moment for me. After a lengthy discussion with my doctor, I finally decided to try a whole food, plant-based diet. I knew if I did not make drastic lifestyle changes then I would be back getting a second open heart surgery a few years later. I decided to avoid the surgery and see what a new diet and lifestyle would be like. After eight months, I can say it is all worth it. My total cholesterol dropped over this short period of time from 194 to 67 mg. I have dropped one of my blood pressure medications all together and my cardiologist is certain that we'll be able to strip more of these drugs away with the restricted arteries continuing to re-open based on avoiding oils and other saturated fats, animal proteins and non plant-based foods. I have lost 40 pounds so far in the process and have in general learned a new way of living. Having Kitchen Verde available each week is one tool in my toolbox to make my new lifestyle easier.
